About the Chef

 

Iván Castro is a Mexican chef whose cuisine explores origin, memory, and ancestral techniques through a contemporary lens.

He is the founder of La Bartola (Toronto), recognized by the Michelin Guide for three consecutive years.

His work focuses on reinterpreting tradition through plant-based cuisine, where each dish seeks to connect with emotion, history, and ancestral roots.
