Meet Chef Iván Castro

​

Iván Castro is a Mexican plant-based chef and the founder of La Bartola — the first vegan restaurant in Canada to receive a Bib Gourmand recognition from the Michelin Guide for three consecutive years.

​

His culinary vision is rooted in the Mexican milpa tradition, seasonal ingredients, fermentation, and ancestral techniques — elevated into contemporary dining experiences that are 100% plant-based and committed to sustainability.

​

Now based in Madrid, Iván continues to share his vision through intimate private dining experiences, international collaborations, and purpose-driven culinary events.
