The reasons why I am a vegan chef

Born and raised in Mexico City. Proud of my background, my country, its culture, and history. Since I was a child, I was surrounded by extraordinary cooks, my grandmother, and my mom, this last one was my mentor and teacher, nowadays and I could proudly say that I have my mother’s magic touch and my own for cooking. My passion for cooking came up as a result of how much I love to eat. I might say I’m a foodie by nature. My mom always tells this childhood story, at the age of 3 years old when I was at the daycare, as soon I was hungry, ran to the kitchen and asked for food…

 

I remember my first-time cooking, I was around 8 years old. I had been craving for pasta with tomato sauce, as a result, I decided to try to imitate what my mom used to do every single day in the kitchen and I nailed it, it was a really good pasta though…well I believe so.

 

Five years ago, after an NYC trip, I decided to change my diet, thanks to one of my closest friends who told me about the vegetarian lifestyle. I began the transition; however, I must say it wasn’t the best way. Despite the fact, I graduated after 4 years of the chef program at the culinary University CESSA, I didn't have the proper knowledge about vegetarian or vegan diets. Then, I decided to research more about that, taking different courses and certifications and right after all this substantial amount of information I became fully plant-based.  l was ready to thrive. I learned how to optimally nourish my body. Having more than one reason that encourages me to change, love for animals, environment and a healthier lifestyle.  

 

The process of eating should be a lifetime experience, which involves all your senses, in order to make you appreciate more the beauty of food and makes you be present while you enjoy each bite. Food remains within you as a memory thru taste experiences, a journey that takes you to your childhood or some other pleasant stage of your life. 

 

I’m always searching to live new experiences and capture moments, continuously hungry and eager to try new flavors and textures with a perfect assembly of ingredients. There's a well-known saying “We eat with our eyes first”. I’m a detail-oriented and creative person, always looking to create exquisite dishes with a beautiful plating to provoke a “wow” factor. Vegan food should be nourishing, delicious and pleasant for everyone.
